Homemade apple pie

There is nothing as special as the taste of the perfect apple pie. The head chef at Storfjord Hotels shares the recipe for her delicious homemade apple pie. Butterly flaky crust, tart and juicy apples, and creamy vanilla custard. A family favourite.

For the crust

Heat the oven to 175°C

300 g of flour
200 g soft butter
100 g icing sugar
1 egg

Mix everything on low speed in a bowl, do not work the dough too much. Refrigerate at least 1 hour. Press the pie crust in a pie plate, place a baking sheet with dried peas on top of the crust, cook at 175°C for about 20 minutes. remove the baking paper, and bake until it turns golden, about 10 minutes.

For the topping

Vanilla cream

3 apples
sugar
cinnamon

Vanilla custard:
5 dl milk
50 g icing sugar
3 egg yolks
35 g cornflower
1 vanilla bean

Whisk the cornflour, egg yolks, and the icing sugar with some of the milk. Boil the rest of the milk with the vanilla seeds and bean. Mix everything and bring it to a boil and cool down. Pour the cold vanilla custard on top of the tart bottom, clean and cut the apples into fine slices and cover the vanilla custard in a pattern of your choice. Sprinkle with cinnamon and sugar before you bake it in the oven at 175°C for 15 minutes. Take the pie out of the oven and brush with simple syrup made of boiled water with one part sugar and one part water. Enjoy.
